1. One-Pan Veggie Stir-Fry


Ready in: 15 minutes

Serves: 2-3


Ingredients:

  • 1 tbsp sesame oil (or vegetable oil)

  • 2 cups mixed vegetables (e.g., bell peppers, broccoli, carrots, snap peas)

  • 1 block firm tofu, cubed

  • 2 tbsp soy sauce

  • 1 tbsp maple syrup

  • 1 tsp grated ginger

  • 1 clove garlic, minced

  • Optional: sesame seeds and green onions for garnish


Instructions:

  1. Heat the oil in a large pan over medium heat.

  2. Add tofu cubes and cook until golden on all sides (about 5 minutes). Remove from the pan and set aside.

  3. In the same pan, stir-fry the vegetables for 5-7 minutes until tender but crisp.

  4. Mix soy sauce, maple syrup, ginger, and garlic in a small bowl. Pour over the veggies and stir well.

  5. Add the tofu back into the pan and toss to coat. Serve with rice or noodles, garnished with sesame seeds and green onions.
