Banana Oat Pancakes

Ingredients:

  • 1 cup rolled oats

  • 1 ripe banana

  • 1/2 cup plant-based milk (e.g., almond or oat milk)

  • 1 tsp baking powder

  • 1 tsp vanilla extract

  • Optional: maple syrup and fresh fruit for serving

Instructions:

  1. Blend the oats, banana, plant-based milk, baking powder, and vanilla extract in a blender until smooth.

  2. Heat a non-stick pan over medium heat. Pour small amounts of batter onto the pan to form pancakes.

  3. Cook for 2-3 minutes on each side until golden brown.

  4. Serve with maple syrup and fresh fruit for a wholesome breakfast.
